My XML is:

    <title>some text goes here</title>

As you can probably guess, I really don’t want the xmlns:xsi="http://www.w3.org/2001/XMLSchema-instance" attributes being copied to every child element, but I don’t know how to stop it.

    You seem to want to transform the name of the root element but copy its attribute so all you want is e.g.

    <xsl:stylesheet
      version="1.0"
      xmlns:xsl="http://www.w3.org/1999/XSL/Transform">
    
      <xsl:output method="xml" indent="yes"/>
    
      <xsl:template match="@* | node()">
        <xsl:copy>
          <xsl:apply-templates select="@* | node()"/>
        </xsl:copy>
      </xsl:template>
    
      <xsl:template match="example">
        <exampleelems>
          <xsl:apply-templates select="@* | node()"/>
        </exampleelems>
      </xsl:template>
    
      <xsl:template match="anode">
        <node>
          <xsl:apply-templates select="@* | node()"/>
        </node>
      </xsl:template>
    
      <xsl:template match="anode/@anodeattr">
        <xsl:element name="{name()}">
          <xsl:value-of select="."/>
        </xsl:element>
