Create a manifest:

<manifest file="build/MANIFEST.MF">
  <attribute name="Main-Class"
             value="foo.FooMain" />
</manifest>
<jar destfile="build/foo.jar"
     manifest="build/MANIFEST.MF">
  <fileset dir="build/classes" />
</jar>
