    Use REPLACE:

    SELECT REPLACE(t.column, 'est1', 'rest1')
      FROM MY_TABLE t
    

    If you want to update the values in the table, use:

    UPDATE MY_TABLE t
       SET column = REPLACE(t.column, 'est1', 'rest1')
