Create a resource dictionary of your own and override the themes.

<ResourceDictionary.ThemeDictionaries>
    <ResourceDictionary x:Key="Default">
         <FontFamily x:Key="ContentControlThemeFontFamily">Times new roman</FontFamily>
     </ResourceDictionary>
</ResourceDictionary.ThemeDictionaries>
