After a quick search on Google i found this: http://wiki.phpmyadmin.net/pma/Config#MaxCharactersInDisplayedSQL
It seems that you just have to edit the config file of PHPmyadmin and set
$cfg['MaxCharactersInDisplayedSQL'] = 1000;to the value you want.
